BLUEBERRY MUFFINS

INGREDIENTS

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 1/2 cups fresh blueberries

INSTRUCTIONS

  1. 1.Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. 2.In a large bowl, combine the melted butter, and sugar, and mix until well combined.
  3. 3.Add the eggs and vanilla extract, and beat until the mixture is smooth.
  4. 4.In a separate bowl, whisk together the flour, baking powder, and salt.
  5. 5.Add the dry ingredients to the wet ingredients, alternating with milk. Gently fold in the blueberries.
  6. 6.Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. 7.Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. 8.Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
