INGREDIENTS
- •1/2 cup unsalted butter, melted
- •1 cup granulated sugar
- •2 large eggs
- •1 teaspoon vanilla extract
- •2 cups all-purpose flour
- •2 teaspoons baking powder
- •1/2 teaspoon salt
- •1/2 cup milk
- •1 1/2 cups fresh blueberries
INSTRUCTIONS
- 1.Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- 2.In a large bowl, combine the melted butter, and sugar, and mix until well combined.
- 3.Add the eggs and vanilla extract, and beat until the mixture is smooth.
- 4.In a separate bowl, whisk together the flour, baking powder, and salt.
- 5.Add the dry ingredients to the wet ingredients, alternating with milk. Gently fold in the blueberries.
- 6.Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- 7.Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- 8.Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
